4 cups bread crumbs
1/2 tsp garlic powder
3/4 tsp dried parsley
6 cups spaghetti sauce
16 oz mozzarella cheese, grated
1/2 c Parmesan cheese, grated
1/2 tsp dried basil
Preheat your oven at 350 degrees.
Peel and slice thinly the eggplant. In a bowl beat your eggs. In another bowl add your bread crumbs, garlic and parsley. Dip eggplant in egg then breadcrumb mixture. Place on a baking sheet. Bake for 10-12 minutes.
In a 9″x13″ baking dish place a thin layer of sauce over the bottom. Place a layer of eggplant overlapping slightly. Add some of each of the mozzarella and Parmesan cheese.
Repeat all layers ending with the cheese. Top with basil. Bake for 35 minutes or until lightly browned and bubbly.
