Crazy-Good Carrots

1 pound carrots cut into even sized one inch diagonals, or several bunches of baby carrots, tops removed
1 medium sweet onion, chopped large, or one large bunch of scallions
1 shallot, chopped small
1 tsp. curry powder
1 tsp. kosher salt
Freshly ground pepper to taste
1 tbsp. good extra virgin olive oil

Directions: Preheat oven to 400. Place vegetables on a jelly roll pan (cooking sheet with sides) and toss together all ingredients. Cover with aluminum foil. Roast 20 minutes.

Uncover, stir vegetables and cook 5 minutes more, uncovered.
